Preparing your moulds (traditional method)
Melt equal parts beeswax and butter. Brush a thin layer inside each warm mould, turn upside down to drain the excess, then chill before filling. This gives canelés their signature glossy, crisp shell and helps them release cleanly.

Care
Wipe out after use, or hand wash with warm water and dry thoroughly. Avoid soaking, dishwashers and abrasive sponges. Many bakers don’t fully wash canelé moulds between bakes, because the seasoning improves with every batch.
